LAMB SHUWARMA
Ingredients:
- 250g lamb
- Cucumber, lettuce (or
cabbage), firm tomatoes and onions.
- Pita bread fresh or
frozen
Method:
1) Meat:
- Thinly slice the lamb
across the grain.
Season with:
- ½ tsp salt
- ¾ tsp sugar
- pinch of pepper
- ½ tsp ground cumin (an
important ingredient)
- finely crushed clove of
garlic (optional)
Optional extra to make
the meat more smooth and tender:
- Add ½ teaspoon cornflour
and a bit of water and mix into the meat thoroughly.
- Add a bit of cooking oil
and mix once more.
- Allow to stand for 15
minutes.
2) Preheat oven to 180-200C.
3) Salad
- Prepare a salad with
onions, tomatoes, lettuce and cucumbers. Do not use
dressing.
4) Cooking the meat
- After allowing the meat to
stand, fry it in a pan or wok over a high temperature
until cooked, adding a bit of water if necessary.
- During the last 3 minutes
of cooking (if pita is frozen), place pita bread in the
oven. If pita is fresh, then 1-2 minutes will suffice
BUT DONT PUT THEM IN FOR TOO LONG!!!
- Cut off the end of the
pita and gently open it to form a pocket. Insert the lamb,
a layer of sauce, followed by the salad, more
sauce, and repeat until it is jam packed with goodies.
