QUICK MUSHROOM & TUNA
PASTA SAUCE
Ingredients:
- 1 x 400g can Mushroom or Cream of Mushroom
Soup
- 1 x 210g can Tuna Chunks in Brine -
drained
- 1 clove garlic crushed and finely
chopped
- ½ medium onion thinly sliced or
finely chopped
- Milk (to thin out the soup iftoo thick)
- Salt
- Freshly ground black pepper
- Origanum
- Mixed herbs
- Olive oil
Method:
- Heat a tablespoon of olive oil in a
saucepan over medium to high heat. Fry the garlic for a
few seconds and add the onion. Fry for 1-2 minutes.
- Break the tuna into smaller pieces and add
to the onion. Fry for another 2 minutes, stirring
occasionally. Add a pinch of salt, ground black pepper,
½ teaspoon or origanum and ½ teaspoon of mixed herbs.
- Add the mushroom soup, thin with milk or
water and bring to the boil.
- Reduce heat to a simmer and simmer for 10-15
minutes.
- Serve over pasta with grated parmesan
cheese and more black pepper.
Option if you have fresh mushrooms,
slice them and add to the pan before adding the tuna.
