QUICK MUSHROOM & TUNA PASTA SAUCE

Ingredients:

Method:

  1. Heat a tablespoon of olive oil in a saucepan over medium to high heat. Fry the garlic for a few seconds and add the onion. Fry for 1-2 minutes.
  2. Break the tuna into smaller pieces and add to the onion. Fry for another 2 minutes, stirring occasionally. Add a pinch of salt, ground black pepper, ½ teaspoon or origanum and ½ teaspoon of mixed herbs.
  3. Add the mushroom soup, thin with milk or water and bring to the boil.
  4. Reduce heat to a simmer and simmer for 10-15 minutes.
  5. Serve over pasta with grated parmesan cheese and more black pepper.

Option – if you have fresh mushrooms, slice them and add to the pan before adding the tuna.
