Ingredients:- |

675 grams (1½lbs) caster sugar |
||||
|
|
|
4.5 litres (1 gallon) water |
||||
|
|
|
2 tablespoons white wine vinegar |
||||
|
|
|
1 large lemon |
||||
|
|
|
|
finely pared rind and strained juice |
|||
|
|
|
4 large Elderflower heads |
||||
|
|
|
|
flowers snipped from the stems |

Method: |
|
||||
|
|
|
Pour the caster sugar into a large bowl |
||||
|
|
|
Add the water and stir until sugar has dissolved |
||||
|
|
|
Stir in the vinegar, lemon rind and juice |
||||
|
|
|
Stir in the elderflowers and cover bowl |
||||
|
|
|
Leave to stand for 48 hours. |
||||
|
|
|
|
||||
|
|
|
Strain through scalded muslin |
||||
|
|
|
Pour into clean bottles and screw on tops |
||||
|
|
|
Leave to stand for 3 weeks or longer |
||||
|
|
|
Becomes very effervescent |
||||
|
|
|
|
||||
|
|
|
Chill well before serving |
