SPENCERS of WELLS

Ginger Beer

 

Serves: ( makes 2.5 litres or 4 pints (approximate) )



Ingredients:-
 

For the culture:
1 pint warm water
half an ounce dried yeast
16 level teaspoons caster sugar (approx 1 eggcup)
16 level teaspoons ground ginger (   ..     ..  )
For the beer:
12 ounces granulated sugar
1 pint boiling water
juice of 1 lemon
2 and 1/2 ( 2.5 ) pints of cold water


 

Method:
Dissolve 2 teaspoons of caster sugar in
a third of the pint of warm water.
Whisk in the yeast.
Stand in a warm place for 15 minutes. (may overflow!)
Add rest of warm water and
2 teaspoons of ground ginger.
Cover loosely.


 
 

Each day for 1 week stir in
2 level teaspoons caster sugar and
2 level teaspoons ground ginger.
To make the beer:
Dissolve the granulated sugar in the boiling water.
Add the lemon juice.
Add the cold water.
Add the liquid from the top of the culture
leaving the sediment behind.


Strain and bottle, corking loosely.

NEVER USE A SCREW TOP.

Keep for a week before use.

Should keep 3 weeks in a fridge.

( I have kept it in fridge for 10 months - it was good! )

Use half the remaining culture to start the next batch.
