Seville Orange Marmalade

 

Serves: makes 4 lbs or 1.8 Kilos (approximate)



Ingredients: -
 

For the marmalade:
3 and half pints (3.5) cold water - ( 2 litres )
2 lbs of seville oranges - ( 1 kilo )
1 lemon
4 lbs of preserving sugar - ( 2 kilo )
Other items:
4 x 1lb jam jars - ( 2 x 1 kilo )
wax discs
rubber bands
labels - name and date
large pan
muslin bag
wooden spoon
fruit or potato peeler
sharp knife
Method:
Wash and dry skin of fruit to remove any wax or preservatives
Use fruit peeler to pare the rind off fruit
Slice rind into thin or thick strips - to taste
Cut fruit in halve and squeeze juice into jug
Save pips and pith in muslin bag with top tied
Pour water into large pan
Add juice and muslin bag - top tied
(Try not to let bag touch bottom of pan)

Simmer for approx. 2 hours - until rind is soft
Remove muslin bag and squeeze juice into pan
Add sugar and stir over a low heat until dissolved
Bring to boil and boil rapidly for 15 minutes
Remove pan from heat and test for set

(Put a little marmalade on a cold saucer and allow to cool
push with finger - if marmalade wrinkles it is ready)

If not, boil rapidly again for 5 minutes and test again
Leave pan to stand for 15 minutes then skim off any scum
Stir and pour into hot sterilised jars
Place wax disc on top, seal, label and date!
