Chicken Casserole

This one is a little favourite of mine, nice and easy to make and it tastes great. If your trying to impress someone, make this for them because you can present it nicely. It's not really a snack though, because of its long cooking time. Try making this with different quantities of each ingredient simply because its best to adapt it to your own taste (more or less wine etc)

What you'll need:

Cambell's Condensed Cream of Chicken Soup - 295g can
White wine - 150ml (but get a bottle to drink while preparing it)
Button Mushrooms - 100g (skinned and chopped in half)
Vegetable oil - 2 tablespoons
Chicken thighs - 4
Chicken drumsticks - 4
Onion - 1 medium, finely chopped

What to do:

Firstly pre-heat the over to 200ºC. In a medium sized casserole dish, combine the soup, wine and mushrooms. Set aside. Then heat the oil in a large frying pan and gently fry chicken with the onions until lightly browned on all sides. Once lightly browned, put the chicken into the casserole dish. Mix the soup and chicken together in the casserole. Cover and bake for 55 minutes or until the chicken is tender, stirring after 20 minutes.
