Crunchy Roasted Potatoes

Being a fairly unbiased magazine we felt that we were offering you far too many non-vegitarian dishes so we felt that it was time that we made a veggie dish, admittedly it is a rather pathetic offering, but it's a start!

What you'll need:

Potatoes - 8
Olive oil - 2 tablespoons
Sea salt - to taste
Dried herbes de Provence (found in a super market)

What to do:

Slice the potatoes thinly but only ¾'s of the way through so that they remain whole but with slices in it. Place on a baking tray and brush lightly with oil, sprinkle on the salt, and about half of the dried herbs. Roast the potatoes for 40minutes the turn and add the remaining herbs and a little more oil, but only if its needed. Roast the potatoes for another 20-30 minutes and then serve hot.
