Serves 4
225g (8oz) short pastry.
Filling
225g (8oz) bacon, rinds removed and chopped.
3 eggs, size 3, beaten.
salt and pepper.
pinch mixed herbs, optional.
milk or egg to glaze.
(1) Heat oven to 190C, 375F, gas mark 5, Line a a 20 cm (8 inch) ovenproof plate or foil baking dish.
(2) Devide the pastry into two, roll out and line the plate.
(3) Grill or fry bacon if wished, Add bacon to the eggs along with the seasoning if wished.
(4) Pour mixture onto pastry, dampen edges and cover with second round of pastry.
(5) Seal edges and decorate the top with pastry leaves. Make a hole in the center and brush with beaten egg or milk. Bake for about 35 to 40 minutes.
