220g (8oz) shortcrust pastry
Filling
1 onion, sliced.
150g (5oz) broccoli, cut into small florets
3 eggs, size 3
150ml (1/4 pint) milk
salt and freshly ground pepper.
100g (4oz) mature cheddar cheese, grated.
(1) Heat oven to 190C, 375F, gas mark 5 and line a greased 23cm (9 inch) flan ring with the pastry.
(2) Place the onion in boiling water and boil for 2 minutes, add the broccoli and boil for a further 2 minutes. Drain well.
(3) Lightly beat the eggs with the milk and season well.
(4) Place the drained broccoli and onion in the base of the flan and pour over the egg mixture. Sprinkle over the cheese and bake in the oven for about 45 minutes until golden brown.
