12 Slices.

225g (8oz) Self Raising Flour.
1x1.25ml spoon (1/4tspn) Bicarbonate of Soda.
Pinch Salt.
75g (3oz) Butter.
175g (6oz) Caster Sugar.
2 Eggs, size 3, beaten.
450g (1lb) Bananas, weighed with skin, peeled and mashed.
100g (4oz) Walnuts, chopped.

(1) Heat oven to 180C, 350F, Gas mark 4. Grease and line the base of a 1kg (2lb) loaf tin.

(2) Mix together salt, bicarbonate of soda and flour.

(3) Cream the butter and sugar until pale and fluffy. add the eggs, a little at a time, alternately with the flour.

(4) Stir in the remaining flour, bananas and walnuts and place in prepared tin. Bake for about 1 1/4 hours

(5) Cool on a wired rack.
