175g (6oz) short pastry
Filling
25g (2oz) butter
100g (4 oz) currants
100g (4oz) demorara sugar
1 egg, size 3
few drops Vanilla essence
glace icing and cherries
(1) Heat oven to 200C, 400F, gas mark 6. Roll the pastry thinly, cut into rounds using a 7.5cm (3inch) cutter and line 18 patty tins.
(2) Melt butter, add remaining ingredients and mix well.
(3) Put a spoonful of the mixture into each case and bake for about 15 to 20 minutes.
(4) When cold, decorate with a little glace icing and cherries.
