Serves 12

225g (8oz) self raising flour.
pinch salt.
100g (4oz) margarine.
100g (4oz) soft brown sugar.
50g (2oz) desicated coconut.
1 egg, size 3.
3x15ml spoons (3tbsp) milk.
1 orange, grated rind and juice.

(1) Heat oven to 180C, 350F, gas mark 4. Grease an 18cm, (7inch) cake tin.

(2) Make up as basic rubbed in method.

(3) Place mixture in prepared tin and bake for about an hour.

(4) When cool, decorate with orange glace icing and toasted coconut
