Basic Recipe

100g (4oz)

50g (2oz) butter or margarine
150ml (1/4 pint) water
100g (4oz) palin flour
3 eggs, size 3, lightly beaten.

(1) Place fat in water and melt in gentle heat, then bring to boil.

(2) Remove from heat and stir in flour.

(3) Return to heat, stirring until mixture forms a ball in the middle of the pan.

(3) Transfer to a large bowl to cool.

(4) Thoroughly beat the eggs into the cooled mixture a little at a time, with a wooden spoon or an electric whisk.

Make sure the water has boiled before adding flour, otherwise a thin paste will form
