500 g fillet of fish (cod, haddock, or perch-pike)
2 slices lean smoked ham
1/2 dl (1/4 cup) finely chopped chives
1 dl (1/2 cup) whipping cream
2 - 3 tsp light-colored French mustard
1 dl (1/2 cup) grated cheese
Heat the oven to 225C/425F. Put the fish in an oven-proof dish. Finely dice
the ham and mix with chives, cream, mustard, and cheese. Spread this mixture
over the fish and put one shelf below the middle in the oven. The fish will
be ready in 18 - 20 minutes. Serve with leaf spinach plus boiled potatoes or
rice.
