Makes 12
225g (8oz) Self raising flour
Pinch Salt
25g (1oz) Lard
25g (1oz) Castor Sugar
1 Egg Size 3, beaten with
enough milk to make 150ml
(1/4pint)
(1) Mix flour and salt, rub in lard
(2) Stir in sugar and mix to a soft dough
with the egg and milk.
(3) Knead lightly, devide into three and
roll each piece into a circle about 5mm
(1/4inch) in thickness. Cut into four.
(4) Bake over a moderate heat on a
greased griddle for about 2 minutes on each side. Serve hot with butter if wished.
Baking with a Griddle
A baking griddle should be well greased
and then heated until a little water sprinkled
on the surface, skips in balls, evaporating.
A frying pan makes a good substitute.
