Makes 15

225g (8oz) Self raising flour
Pinch salt
100g (4oz) Margarine
50g (2oz) castor sugar
50g (2oz) currants
1 egg size 3
2x15ml spoons (2tbsp) Milk

(1) Mix flour and salt, rub in margarine, stir in sugar and currants.

(2) Mix a fairly stiff dough with the egg and milk

(3) Roll out about 5mm (1/4in) in thickness and cut into rounds, reroll the trimmings

(4) cook on a moderately hot greased griddle for about 3 minutes on each side

Serve buttered hot or cold

Baking with a Griddle

A baking griddle should be well greased and then heated until a little water sprinkled on the surface, skips in balls, evaporating. A frying pan makes a good substitute.
