Serves 4

100g (8oz) short pastry
Filling

100g (4oz) streaky bacon, chopped
75g (3oz) cheese, grated.
2 eggs size 3
150ml (1/4 pint) milk
salt and pepper.

(1) Heat the oven to 190C, 375F, gas mark 5. Line an 18cm (7 inch) flan dish or sandwich tin with the pastry.

(2) Fry the bacon lightly, then cool.

(3) Place half the cheese in pastry case and cover with bacon.

(4) Beat the eggs and milk together, season and pour over the cheese and bacon, sprinkle on the rest of the cheese.

(5) Bake for about 40 minutes until set and golden brown.

For an alternative filling, try adding 1x213g (7 1/2 oz) can of drained mushrooms instead of bacon.
