225g (8oz) Self Raising Flour
1x2.5ml spoon (1/2 tspn) Bicarbonate of Soda
25g (1oz) Lard
25g (1oz) Margerine
100g (4oz) Caster Sugar
1 Orange, Grated rind and juice
175g (6oz) Raisins
Milk

(1) Heat oven to 160C, 325F, Gas mark 3. Grease and line the base of a 1kg (2lb) loaf tin

(2) Mix flour and Bicarbonate of soda, rub in fats.

(3) Mix in sugar, orange rind and fruit.

(4) Make the juice of the orange up to 150ml (1/4 pint) with milk and add to the dry ingredients, mix well

(5) Place the mixture in the greased tin and bake for about 1 1/4 hours
