Makes 16
250g (9oz) Self raising flour.
75g (3oz) caster sugar.
175g (6oz) butter.
(1) Heat oven to 160C, 325F, Gas mark 3. Grease a baking tin.
(2) mix flour and sugar in a bowl, rub in butter.
(3) Knead well to forma smooth paste.
(4) Devide into 2 equal parts, shape and flaten into 2x18cm (7inch) rounds, about 1 cm (1/4 inch) thick.
(5) Mark the top into 8 portions, decorate edges and prick with a fork, place on a baking tray and bake for 30 minutes until pale and golden.
