Serves 20
100g (4 oz) magarine.
100g (4 oz) caster sugar.
2 eggs, size 3.
5x15 ml spoon (5 tbsp) milk.
150g (5 oz) self-raising flour.
75g (3 oz) groung rice.
few drops lemon essence.
Glace Cherries.
(1) Heat oven to 200C, 400F, gas mark 6. have ready 20 paper cases or well greased patty tins.
(2) Cream margarine and sugar until light and fluffy. Beat eggs with milk.
(3) Mix flour and ground rice, add the creamed mixture with the alternately with the egg mixture. Mix well.
(4) Half fill 20 paper cases with the mixture, place a piece of cherry on top of each and bake for 15 to 20 minutes until firm.
