Makes 24
225g (8oz) Self Raising Flour
100g (4oz) Caster Sugar
100g (4oz) Butter or Margarine
1/2 Lemon, grated rind and juice
1 Egg, size 3 beaten.
(1) Heat oven to 180C, 350F, Gas mark 4. Grease two baking trays.
(2) Mix flour and sugar, rub in the fat.
(3) Add lemon rind, juice and sufficient egg to make a soft dough.
(4) Roll out thinly and cut into 7.5cm (3inch) rounds. Place on baking trays and bake for 15 minutes.
