Serves 4
5 large potatoes sliced lengthways
1lb of firm fish fillets/steaks sliced into chunks
1 can of anchovies
1 small tub of soured cream, cremè frâiche/Greek yoghurt etc.
1 or 2 leeks chopped finely
2 tomatoes sliced
Par cook the spuds in the microwave for about 6 minutes. Slice the fish into chunks. Layer all of the ingredients in a low oven-proof dish, season with pepper and salt as you go. Put best looking spuds on top. Pour the oil from the anchovies over the top of the spuds. Add green chili or green pepper for garnish.
Cover with foil and bake in a moderate oven 180°C for about ½ an hour. Remove the foil and bake until hunger prevails (at least ½ an hour).
Great with green beans + salad.
