Serves 12
100g (4oz) margarine.
75g (3oz) caster sugar.
1x15 ml spoon (1 tbsp) golden syrup.
2 eggs, size 3.
175g (6oz) self-raising flour.
2x15 ml spoon (2 tbsp) milk.
50g (2oz) chopped walnuts.
Fudge and glace icing.
Walnut halves.
(1) Heat oven to 180C, 350F, gas mark 4. Grease an 18cm (7 inch) cake tin.
(2) Cream the margarine, sugar and syrup, until light and creamy.
(3) Beat in the eggs with a little flour.
(4) Gradually add the remaining flour, milk and nuts.
(5) Place mixture into the prepared tin and bake for about 40 to 45 minutes.
(6) When cool, split open and sandwich with fudge icing.
(7) Decorate top with white glace icing and walnut halves.
